Food Legacy Special! Grandma June's Enchiladas
June Correll married Judge Phillip Correll in 1959, joining their families and making their own. 7 kids, 17 grandkids, 37 greats, and 2 great greats. She served as the court clerk as her husband was the Judge. She loved serving in her community & church. She loved being part of the Garden Club, Rekamemoh Club, and Bridge Club.
I was able to meet June and become her caregiver. I immediately had a close bond not only with June, but her grand-daughter, Holly. June’s was full of spirit. Sharing her words of wisdom, “never have more than two martinis”. We often went for margaritas. I admired how she and her husband successfully blended their families with mutual love and respect. A strong bond and love of family, no matter what.
I was given a copy of her hand made cook book. I have heard all about her enchiladas. So in honor of June Correll, we are making them a special this week. While they last! Thank you, June for all the love you brought to so many and being such a remarkable matriarch.
